INGREDIENTS Two tablespoons of olive oil Three garlic cloves, minced 1/4 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped carrots Four (3.5 ounces) links of Italian sausage, sliced Eight cups of chicken stock One teaspoon dried oregano One tablespoon of dried basil 1/4 cup chopped fresh parsley 2/3 cup uncooked white rice 1/2 cup heavy cream Salt and pepper to taste DIRECTIONS In a large pot, over medium heat, heat olive oil. Add the mirepoix and cook, stirring, for three minutes or until tender.
