(from Sandal English, published in the Arizona Daily Star, August 16, 1991) INGREDIENTS 2 ½ cups prickly pear juice ¾ ounce package of powdered pectin 3 tablespoons of fresh lemon juice 3 ½ cups sugar Sterilized jars DIRECTIONS Place prickly pear juice and pectin in a quart pan. Bring to a boil, stirring constantly.
