Declared the state dish on May 11, 1977, with roots dating back over 140 years, beginning in San Antonio, the “Bowl of Red” is known for its controversy, particularly in South Brewster County, where the very first chili cookoff occurred in Terlingua. Due to disagreements between the founders, two separate cook-offs were formed in 1983.

Few dishes embody both comfort and the celebration of Mexican comfort food like a bowl of pozole. Traditionally, a festive centerpiece in households, pozole is a hearty and flavorful dish. The green chicken version is my twist because I think all meals need protein.
