COVID impacted just about everybody in the world in some way.And everyone was anxious to get back to normal as the virus ran its course. While most of the public health mandates have ended, there is still a lingering sense that things are not quite back to normal. There’s some exciting news in the realm of cooking for all you busy home cooks. It’s quick, it’s easy, and requires minimal effort. That’s my kind of cooking, especially when trying to keep excessive heat from building up in your house on these hot afternoons and evenings.
