As Texans continue to choose corn as a major food ingredient— happily consuming street tacos, enchiladas, and tortilla chips by the ton—research from a new study finds that corn also holds many answers to the unknown stories of this country’s earliest people.

The Alpine Emergency Services Board held its first meeting of the new year on Tuesday, January 21, with Treasurer Stacey Wood attending via phone. Albert Benitez and Aaron Rodriguez were absent.

The Brewster County Commissioners met on Tuesday, January 28, to discuss a range of issues impacting the region, including water distribution challenges, major infrastructure projects, and a Super Bowl ad campaign promoting local tourism.

INGREDIENTS DIRECTIONS Two 10-ounce cans of chicken, drained 3/4 cup of Frank’s RedHot hot sauce Two 8-ounce packages of softened cream cheese One cup of ranch dressing 1 1/2 cups shredded cheddar cheese One bunch of celery cut into 4-inch pieces One box of chicken-flavored crackers or chips of choice Heat chicken and hot sauce in a skillet over medium heat until heated, around 3 to 5 minutes. Stir in cream cheese and ranch dressing.

INGREDIENTS 8-ounces of softened cream cheese Four jalapeno peppers, seeded and diced One cup shredded, cooked chicken One green onion, chopped 1/2 cup real bacon bits 1/2 cup water One cup of shredded sharp cheddar cheese 1/2 cup sour cream DIRECTIONS Combine cream cheese, jalapeno peppers, chicken, green onion, bacon bits, and water in a multi-functional pressure cooker (such as an InstantPot). Close and lock the lid, select the manual setting, and set the timer for 5 minutes.
