Hearty winter soup for those chilly evenings

HEAD OVER MEALS Despite afternoon temperatures being in the mid to high 70s in the Last Frontier lately, we’re technically still in the midst of winter. As most of us know, the south, and Texas in particular, does its own thing when it comes to seasonal weather.

INGREDIENTS Two tablespoons of olive oil Three garlic cloves, minced 1/4 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped carrots Four (3.5 ounces) links of Italian sausage, sliced Eight cups of chicken stock One teaspoon dried oregano One tablespoon of dried basil 1/4 cup chopped fresh parsley 2/3 cup uncooked white rice 1/2 cup heavy cream Salt and pepper to taste DIRECTIONS In a large pot, over medium heat, heat olive oil. Add the mirepoix and cook, stirring, for three minutes or until tender.

Dear Neil, do you have an organic suggestion for removing the cane in my backyard? I’m about to start a major relandscaping effort and must get rid of the cane first. If the plants’ leaves are two inches wide and 10 or 15 inches long, that would be cane.
