When Colonel Washington Seawell, Eighth Infantry, arrived on Limpia Creek in October 1854 to build Fort Davis, he selected a beautiful, sheltered canyon. Jim Davis’ famous cartoon character Garfield had a favorite food, and it was not Friskies. No, this cartoon icon savors that cheesy Italian delight lasagna. I mean, what’s not to love about lasagna. Layers of delicious pasta coated in tomato sauce and layered with meat and a variety of chesses and spices is akin to nectar of the gods. Pair with a salad and a loaf of garlic bread and, voilà, you have a meal fit for a king.

Ingredients Lasagna noodles One jar of your favorite pasta sauce Ricotta or cottage cheese One egg Chopped onion Chopped garlic clove Sweet Italian sausage Lean ground beef Mozzarella cheese Italian spices Grated parmesan cheese Directions: I began by browning my meats, along with onions and garlic, in a cast iron skillet. Once well browned, I add in my sauce, Italian spices, and salt and pepper to taste.
