WEEK Alpine Humane Society Pet of the Week is Athena. Athena is looking for that special someone. She had a rough start to life, but it has not affected her sweet, affectionate, adoring personality. Gentle and kind, she loves walks and romping around the yard with the other dogs at the Shelter. She loves being the top dog, so an introduction with another dog before turning them loose to play is suggested, although she tends to get along with everyone.

Mexican cornbread casserole

Ingredients: For the filling: 1 tablespoon olive oil 1 cup onion, chopped ½ cup red bell pepper, chopped ½ cup green bell pepper, chopped 1 pound lean ground beef 2 cloves garlic, minced 1 teaspoon chili powder 1 teaspoon cumin 1 teaspoon oregano 1/8 teaspoon ground cinnamon Salt to taste Pepper to taste 1 cup frozen corn 1 cup Mexican cheese blend, shredded and divided 1 cup of salsa For the cornbread topping: 1 cup cornmeal 1 teaspoon salt 1 teaspoon baking powder 1 cup milk 2 eggs Directions: Preheat oven to 425 degrees. Heat the olive oil over medium-high heat on the stovetop in a large skillet.
