Oh, the weather outside was frightful… if you’ve lived in Texas in the last five years, you’re probably familiar with the great Texas freeze that swept across the entire state in February 2021, decimating farmlands, homes, and roads and impacting the lives of millions. Humans have since recovered, but what about wildlife? After the freeze, many types of birds were found deceased as the ice melted away.

Next month, I turn 80, something I never imagined would happen. Partly because, as a War Baby, I grew up at a time when unknown dangers lurked, and instead of avoiding them, we embraced them. Childhood diseases were a rite of passage, as were rock fights and BB gun fights (I was once shot in the middle of the forehead and once in the shoulder – surprised that the mother’s constant warning, “Don’t shoot your eye out,” never came true).

INGREDIENTS One lemon, halved Two cups of sanding sugar for glasses Cold, dark blue sports drink (such as blue cherry Gatorade) One pint of lemon sorbet One up (or more) of ice cubes Cold lemon or pineapple seltzer for topping off DIRECTIONS Rub the cut side of the lemon on the rims of four glasses. Pour sugar onto a small plate and press the rims of glasses into sugar to coat—juice lemon into a blender (you should have 2 to 3 tablespoons) of juice.

I hope that you all had a wonderful, grace-filled Christmas Day and made many sweet memories. We all remember special Christmas moments that will stick with us for years to come---meals with families, meaningful gifts, and other beautiful experiences. One of my most precious memories is a Christmas morning when our son was about three. That morning, he walked into the living room in his blue, fuzzy footie pajamas. Then his eyes opened wide, and he exclaimed, “He Came!”Of course, he was excited and amazed that Santa had come and brought him his first 2-wheeler bicycle. But the wonder-filled words he uttered captured the meaning of Christmas for all of us—He came! Jesus came in the form of a baby and lived among us. That is the wonder we celebrated this season. That is why we sang carols, put on nativity pageants, and lighted Advent candles.
