Chicken noodle soup:casserole style

Have you ever been so sick that it takes every last bit of strength you have to raise your head? Or better yet, you’re sick and camped out on the couch, but eating a steaming hot bowl of chicken noodle soup is difficult, to almost impossible without the risk of spilling it everywhere? That problem has now been solved, with chicken noodle soup, but in casserole style.

Chicken Noodle Casserole

Ingredients: 16 ounces egg noodles 4-6 cups chicken broth 2 bay leaves 3 tablespoons unsalted butter 3 stalks celery, diced ½ yellow onion, diced 3 medium carrots, diced 3 cloves garlic, minced 3 tablespoons all-purpose flour 1 cup milk 2 teaspoons dried parsley 2 teaspoons dried basil Salt, to taste Pepper, to taste 3 cups chicken, cooked and shredded 3 cups mozzarella, shredded and divided.

Northern Big Bend eligible for Wilderness Designation

Body
Over 99 additional square miles of rugged mountains and sweeping desert expanses in the northern reaches of Big Bend National Park have been determined eligible for wilderness designation. This administrative determination does not make a recommendation to Congress for designation and has no impact on public use, nor does it change current management. Rather, it recognizes the wilderness characteristics of these lands which had not previously been assessed.

Sul Ross athletics applies for Division II

The Sul Ross Athletic Department, under the direction of Amanda Workman, officially applied to compete in NCAA Division II athletic programs on Jan. 30. Sul Ross currently competes as a Division III school in the American Southwest Conference, but has been invited to join the D-II Lone Star Conference.
