If your family is like most of us, you eat “the meal” once — maybe twice — before everyone gets sick of the holiday food and starts asking, What the hell are we going to do with all this? I dug through the vault looking for ideas that actually taste good. Sure, some of those sides are destined for the trash, but with a bit of creativity, you can turn the leftovers into appetizers that are seriously leveled up.

SWEET POTATOES

Cut in medallion sizes, drizzle with olive oil and salt, roast at 400 degrees for 25 minutes, top with Brie, fresh cranberries, and Pecans, and drizzle with hot honey..

CORNBREAD BALLS

Chop leftover cooked turkey, mix with leftover cornbread stuffing, pan fry, similar to meatballs, for crispy crust, bake at 375 for 20 minutes, and top with parmesan.

TENDERLOIN CROSTINIS

Cut French bread into ½ thick slices- bake with olive oil and garlic pods, top with medium-rare tenderloin, and top with Gorgonzola cream cheese, fresh thyme, Cheese mixture. Gorgonzola Cheese Mixture: Gorgonzola, and parsley.

Take a package of Crescent rolls, cut into muffin-size rounds, bake with a slice of Brie, and top with cranberry sauce. Follow the baking instructions on the roll package, and add fresh rosemary..
