LEMON-SHALLOT VINAIGRETTE

Makes 1 1/3 cups INGREDIENTS ½ teaspoon of finely grated lemon zest 2 tablespoons of fresh lemon juice 2 tablespoons minced shallots 1 ¼ teaspoons of Dijon mustard 1 small, minced garlic clove 1/3 cup extra-virgin olive oil Kosher salt Freshly ground black pepper DIRECTIONS In a blender, combine the lemon zest and juice, shallots, mustard, vinegar, and garlic. Puree until smooth.
